Its a beautiful day here in London & the sun is shinning. We are now in to spring time & the weather is starting to get warmer which means many will start to incorporate more salads back in to their daily / weekly regime.


Here is a really tasty & easy one to make which is also full of protein too



  • 8 asparagus spears
  • 2 teaspoons olive oil
  • 1 garlic clove
  • 2 cups mixed greens
  • 3 hard boiled egg
  • 1 tablespoon vinegar
  • Salt



  1. Cut asparagus spears into short pieces; saute with olive oil & the  garlic clove. Top with the mixed greens with cooked asparagus, 3 chopped hard-boiled egg, 1 tablespoon vinegar and salt and pepper to taste.
